Fattorie Fiandino was the first cheesemaker in the world to introduce the innovative Kinara method, which eschews animal rennet and uses natural plant-based rennet obtained from the flowers of the wild Cynara cardunculus. This wild thistle is native to the picturesque mountains in Italy's Piedmont region. The plant-based rennet also plays a key role in making the Kinara cheese lactose-free.
