The Persian blue salt is perfect for grinding in a mill but also looks lovely displayed in small bowls. The blue colour is only partially lost if the salt is ground. It is one of the rarest and oldest rock salts in the world.

Where does the bluish glow on the salt crystals come from? The small salt crystals were formed in the ancient seas before they were encircled by mountain rock some 100 million years ago. During this process, potassium chloride combined with the salt under high pressures. In the process, the crystal structure has been shifted, which is why the salt today appears bluish when light shines through it.

Persian blue salt should be used for seasoning. It goes very well with meat, seafood, grilled fish, vegetables, potatoes and salads.
