"Churrasco" describes a typical Brazilian way of barbecuing that was established long before there were smokers or barbecue grills. Wandering cattle herders put pieces of meat on long skewers and grilled them over an open fire - which made them particularly juicy and crispy. Ancho chillies, smoked paprika, pepper, coriander and cumin give this spice blend a nice kick, while numerous herbs round it off harmoniously.
