Juniperus communis

The berries are used fresh, dried, whole or ground. Juniper is a classic condiment for many dishes such as wild boar and deer. Sauerkraut, lamb, beef and pork are also often seasoned with juniper. Juniper-wood, branches and berries are also often used for smoke, because juniper smoke is known for its disinfecting properties.

Many juniper species live in the northern hemisphere, mainly in Europe and Asia. Most juniper berries come from Mediterranean regions, because the more sun they enjoy, the more flavorful they are.
